The grapes are cooled for 12 hours in a cold room. Each vineyard is vinified separately. Fermentation is carried out at controlled temperature with periodic pumping over and delestages. Only the free-run wine is used to fill the French oak barrels. After 12 months of ageing, the best barrels are selected. Ses Nines and a coupage is made for the 07/9 selection.
Tasting Notes
Garnet-colored wine with a medium-high layer and purple rim.
The nose is intense with aromas of red fruit in liqueur and balsamic notes.
In the mouth it has a medium acidity, integrated alcohol and very ripe tannins. In the aftertaste ripe red fruit and spices appear.
